Cooking Instructions
You Will Need (for 60g Pack):

Meat: 1 kg / 2.2 lbs (4–6 large pieces)

Bones (Knuckle & Marrow): 2 kg / 4.4 lbs

Onion: 1 medium, finely sliced

Flour: 1 cup (100g), dissolved in 2 cups of water
-
Cooking Oil: 1 cup / 175 ml
-
Shan Nihari Mix: 1 packet (60g), mixed in ½ cup water
Steps:

Heat ½ cup oil, add meat and prepared Shan Nihari Mix. Sauté until oil separates from the masala.

Pour in 18 cups (3.5 liters) of water along with the bones. Stir and bring to a boil. Cover and cook undisturbed on low heat:

Beef: 6 hours

Goat/Lamb: 4 hours

Chicken: 3 hours
-

Remove bones, extract marrow, and return marrow to the pot.

Slowly add the dissolved flour mixture while stirring. Cook for 15 minutes, stirring occasionally.

In another pan, heat remaining ½ cup oil, add sliced onions, and fry until golden brown. Pour this oil-onion mix into the Nihari.

Simmer covered on low heat for 10 more minutes.

Optionally, skim off excess oil before serving.
