Cooking Recipe: Traditional Bihari Kababs

What You’ll Need (for 50g packet):

• Boneless Meat (small cubes) – 1 kg

• Fried Onions – 3 tbsp, finely crushed

• Ginger Paste – 2 tbsp

• Garlic Paste – 2 tbsp

• Plain Yogurt – ½ cup, whipped

• Oil or Ghee – 3–4 tbsp

• Shan Bihari Kabab Mix – 1 full packet

Cooking Instructions:

1. Mix Shan Bihari Kabab Mix, fried onions, ginger paste, garlic paste, yogurt, and oil/ghee. Apply evenly to the meat.

2. Marinate for 3–4 hours, or ideally overnight for best flavor.

3. Thread the meat onto skewers.

4. Grill on very low heat, turning occasionally, until kababs are fully cooked and browned evenly.
   Tip: If kababs are too soft, wrap a thread around them to help hold their shape during grilling.

Serving Suggestion:
Serve hot with tamarind chutney and onion rings soaked in cold water.

Additional Notes:

For Perfect Fried Onions:
Deep-fry thinly sliced onions in hot oil until golden brown. Remove, drain on absorbent paper, cool, and crush coarsely.

For Chicken Variation:
Use bone-in chicken pieces for deeper flavor.

For Fried Bihari Kababs:

• Use an extra 1 cup of ghee or butter.

• Follow Step 1 of the recipe above.

• Heat ghee in a pan, add marinated meat, and fry on high heat until oil separates. Stir frequently.

• For a smoky flavor, place a piece of hot coal in a small bowl inside the pot. Pour a tablespoon of ghee over the coal and cover the pot for a few minutes. Remove coal before serving.
