Cooking Recipe
Ingredients Required (for 50g Masala):

White Lentils (Dal Mash): 1 cup (200g), soaked for 3 hours

Rice: 3 tbsp, soaked for 15 minutes

Baking Soda: 1 tsp

Green Chilies: 2–3 medium, finely chopped

Fresh Onion Paste: ½ cup

Fresh Coriander (Cilantro): 2–3 tbsp, finely chopped

Ginger Paste: 2 tbsp

Garlic Paste: 2 tbsp
-
Shan Salt: 1 tsp
-
Sugar: 1 tbsp

Yogurt: 1kg, whipped and sieved through muslin

Cooking Oil: As needed, for deep frying

Papri (crisp crackers): 1 cup, crushed

Shan Dahi Bara Chaat Masala: 3–4 tbsp
Steps of Cooking:

Drain soaked lentils and rice. Blend with baking soda, onion paste, ginger, garlic, and Shan Salt to make a coarse batter. Stir in chopped chilies and fresh coriander.

Heat oil. Drop spoonfuls of batter into the oil and fry on medium heat until light golden. Remove and let cool.

Re-fry the dumplings until deep golden brown. Soak in lukewarm water for 5–10 minutes, then gently squeeze out excess water.

Mix sugar into the yogurt. Spread half the yogurt in a serving dish, place dumplings over it, and pour remaining yogurt on top.

Garnish with crushed papri and generously sprinkle Shan Dahi Bara Chaat Masala. Serve chilled.
