Cooking Recipe: Dahi Bhalla Chaat
Ingredients Needed (for 100g spice mix):

White Lentils (Dal Mash): 1 cup / 200g (washed and soaked for 3 hrs)

Rice: 3 tbsp (soaked for 15 min)

Baking Soda: 1 tsp

Green Chilies: 2–3 medium (finely chopped)

Onion Paste: ½ cup

Fresh Coriander: 2–3 tbsp (finely chopped)

Ginger Paste: 2 tbsp

Garlic Paste: 2 tbsp

Shan Salt: 1 tbsp

Sugar: 1 tbsp

Yogurt: 1 kg (whipped and sieved through muslin)

Oil: 500 ml / 3 cups (for deep frying)

Papri: 1 cup (crushed)

Shan Chaat Masala: 3–4 tbsp
Cooking Steps:

Drain soaked lentils and rice. Blend with baking soda, onion paste, ginger paste, garlic paste, and Shan Salt into a coarse batter. Mix in chopped coriander and green chilies.

Heat oil and drop spoonfuls of batter to fry dumplings until golden. Let them cool, then soak in lukewarm water for 5–10 minutes. Gently squeeze out excess water.

Stir sugar into the whipped yogurt and spread half in a serving dish. Add soaked dumplings, top with remaining yogurt.

Sprinkle Shan Chaat Masala generously and garnish with crushed papri. Serve chilled.
